The Eater Spring 2012 Cookbook and Food Book Preview

While the Spring cookbook season may not be able to boast the volume of books released in the Fall, it makes up for it in quality. The books coming out between now and May 1 are heavy on big names, from a memoir (with recipes, of course) by New York chef April Bloomfield to Chicago chef Paul Virant's book on preservation. The chefs are out in full force this Spring: Zak Pelaccio, Chris Cosentino, Nobu Matsuisa and the mad ice cream scientists behind San Francisco shop Humphry Slocombe all have books coming, too.

And don't forget, Spring is grilling season: all kinds of books are coming out to explain how, exactly, one perfects the art of cooking over the open flame. Round that out with some stellar wine books, a few thoughtful political volumes, two books on quinoa and one on everyone's favorite omnipresent seasonal ingredient, ramps, and you've got a hell of a lot of reading to do.

Chefs, Restaurants, and Other Famous Food Folk

A Japanese master gets his vegetable on. And before you go ahead and assume this is going to be a whole bunch of health food, note that there are veg-heavy desserts and cocktails included. The book also features tofu recipes.

Chicago chef Paul Virant and cookbook author Kate Leahy have teamed up on a book that could prove to be incredibly influential. After all, here is a possible answer to the question, "How do restaurants in areas without year-round growing seasons go entirely local?" By dressing up canning, fermenting, and other old-world preservation techniques in Michelin-starred clothing, Virant and Leahy's book will be, at the very least, a must have for cold-weather home cooks.

For San Francisco chef Chris Cosentino's first book, he starts at the very beginning, with Italian antipasti. Fans of Cosentino's nose-to-tail techniques may be surprised by the number of vegetable-driven recipes (for a full list, see here).

New York chef Zak Pelaccio's first cookbook features 125 recipes for the "Southeast-Asian inspired, French-Italian inflected cuisine" of his Fatty 'Cue and Fatty Crab restaurants. Also, it's told with "a refreshing irreverence that would do Anthony Bourdain proud," which is publisher-speak for swear words. Expect many, many photos of pigs.

New York mistress of all things porcine April Bloomfield wrote this book with food writer JJ Goode, and told Eater that it's about "people and things that inspired me to cook stuff." Like who? British folk like Rose Gray, Ruthie Rogers [both of the River Café], [cookbook author] Simon Hopkinsons, Rowley Leigh [of Le Cafe Anglais], as well as the many cuisines she's been exposed to since moving to New York.

The folks behind ice cream flavors like "Secret Breakfast" (cornflakes and bourbon), foie gras, and peanut butter curry have collected ice cream recipes for making at home. Written with former Eater editor Paolo Lucchesi, this book may cause spontaneous ice cream maker purchases. You have been warned.
