After years of catering and months of roving as a pop-up, Campfire BBQ has found a proper home for its chuck wagon three days a week in the parking lot of Downtown Spirits (2300 7th Ave). The wagon—which in true outlaw style was purchased with a combination of cash and an antique shotgun by husband-and-wife duo Stefan and Julie Giles—now offers Campfire’s full menu each Wednesday, Thursday, and Friday from 11 a.m. until they sell out, save the salmon plate and eggplant sandwich due to limited warming space.
Campfire made Eater’s Best Damn BBQ in Seattle rankings last month, and has quietly forged a name for itself this winter, especially with its quick-to-sell-out brisket and pulled pork sliders. And bonus: Downtown Spirits has public parking and outdoor seating, but also invites Campfire guests to bring their wagon fare into their shop to pair with beverages.
