The deal at Boxcar Betty’s has always been that customers can have their chicken any way they’d like, so long as it’s fried. But the three-year-old restaurant is now adding grilled chicken to its menu.

As a press release notes, the chargrilled breasts are gluten-free and “potentially healthier.” But owner Roth Scott is reserving his enthusiasm for the new item’s preparation and flavor.

“We are super excited about it,” Scott says of the sous-vide process they’ve devised to lock in moisture before the chicken is chargrilled.

According to Scott, chicken destined for the grill will be treated with the same brine as chicken bound for the fryer. He believes the sous vide method will help produce grilled chicken sandwiches as memorable as the restaurant’s award-winning fried chicken sandwiches, topped with a selection of pickles, cheeses and sauces.

Because the breast can be subbed into any sandwich or salad, customers could conceivably create a grilled chicken sandwich with beer cheese, bacon jam and peach coleslaw, which may explain why Scott isn’t promising health benefits to everyone who goes the grilled route.
