Wicked Good Grinders Comin' to the Pony Pahkin' Lot Tomorrow

Attention, New England transplants: Wicked Good Grinders wants to scratch your nostalgic itch. Following a handful of trial runs, the food truck's grand opening is tomorrow, January 26, in the parking lot of Pony in Capitol Hill.

See the current menu online then get your fill of steak and cheese, chicken, eggplant, or meatball parmesan, and other sub-style sandwiches with Cape Cod potato chips tomorrow from 10:30 a.m. to 4 p.m. at 1221 E Madison St. And brush up on your East Coast slang with a recent Facebook post from the company:

Owner Joel Mathieson, who works behind the scenes at KOMO-TV and has around a decade of restaurant experience back east, told Eater he and his wife, former KING 5 News meteorologist Lisa Van Cise, have been "saving our pennies" for years to bring a taste of his native Connecticut and its neighboring states to the Pacific Northwest.

"There's a lot of great food in Seattle, but not a lot for people who just want something really simple and old school. Everything's very fancy and high end," Mathieson said. "I want to cater to people who want something high quality but good old fashioned stuff. No chutneys or aiolis or kale."

Wicked Good originally hired Pony owner and architect Mark Stoner to assess a brick and mortar property across the street from his bar; when the gears shifted, Mathieson asked if he could park a food truck at Pony. Stoner's "been great, letting us park for free right now, helping out a local business," Mathieson said.

For now, Wicked Good Grinders can only be found Tuesdays at Pony, but Mathieson expects to hire up and add more opening hours soon, possibly at other locations. He hopes to incorporate cold cuts into the menu once the truck is a full-time venture.
