With having all the kids’ activities in full swing, I am always on the lookout for quick and easy dishes to make for the whole family. Recently, I got inspired to make this tasty dish and thought I would share it with you!

Easy to make Tex-Mex Goulash

Easy To Make Tex-Mex Goulash

Ingredients:

(serves 6)

  • 1 28 oz can of Diced Tomatoes, juice and all. (I used Redpack because I love how fresh their tomatoes taste)
  • A 15 oz can of reduced sodium black beans, drained
  • A 15 oz can of chili beans, half drained
  • 1 T of Dry Salsa mix. (If you want to make your own, there is a tasty recipe found on The Sustainable Couple)
  • 3 C of Elbow Macaroni

Directions:

In a pot, heat water to boil macaroni. Using a large skillet, heat 2 T of oil and add drained black beans, half-drained chili beans, and diced tomatoes and juice on medium heat. Stir in dry salsa mix and let simmer. Once macaroni is cooked, drain and add to the tomato and bean mixture. Simmer for ten minutes and serve warm.

For extra flavor, add sour cream or cheddar cheese to taste.

What We Love About This Tex-Mex Goulash Recipe

This Tex-Mex Goulash recipe is super simple to make. Since we love things with a bit of a kick, this recipe gives just enough southwestern flair to do just that!

This recipe is also easy to double or triple, which works great for busy families. I love to have something that I can put in the fridge or freezer to pull out in a pinch.

Also, if you remember from my grocery budget post, this recipe uses a lot of ingredients in my “Must Have Staples.” It makes for a perfect dish for when you forgot to take your planned meal out of the freezer to defrost!

    1. Thank you! This was something I came up with when things were pretty lean for us and it remains a staple here because it is yummy and feeds my small army!
