Ice Cream Tacos May Make You Never Eat Ice Cream Sandwiches Again

When it comes to tacos, we don't discriminate. We love them whether they're soft or hard, with flour tortillas or corn, savory or sweet. Yes-sweet. Dessert tacos are our latest obsession.

Developing a dessert taco recipe wasn't as easy as I thought it would be. While we have many handy kitchen appliances in the Delish test kitchen, a waffle cone maker is not one of them. Recreating the crunchy sugar cone in a Choco Taco wasn't going to happen. Many of the copycat recipes I saw on Pinterest used crepes as an alternative ice cream vessel. Delicious, sure, but a little too time-consuming when dessert is on my mind.

A cookie taco sounding amazing, but when I tried to mold freshly-baked chocolate chip cookies into taco shells on a foil-lined paper towel roll, it was a major disaster. All of the cookies broke. I then had a few other botched experiments (which I won't go into here) before I finally had a delicious success, thanks to this amazing idea from our managing editor: cinnamon-sugar sautéed tortillas (we used it before in this "crepe" cake). They're pliable but hold their shape in the freezer with the help of an upside-down muffin tip.
