Bacon drippings improve even the humblest of dishes (braised greens, we mean you). And, thanks to lardo—fatback cured with herbs and spices—we can add porky goodness to just about anything. When thinly sliced, the pearly white ribbons melt in your mouth. Drape them over warm beans, or treat them as a decadent topping for bruschetta, flatbreads, and pizza.
