A history of digestive problems as a child and a serious operation in her 20s resulted in Pippa Kendrick being unable to eat any dairy produce, wheat, eggs, soya or yeast. Deciding to adopt an entirely new life and ‘determined to find food that could feed me, fuel me and help to heal me, yet still taste good’, she started the Intolerant Gourmet blog and wrote two books, of which this is the second. It contains more than 120 free-from recipes, including adapted classics such as lemon and ginger chicken, shepherd’s pie and chilli, as well as proper puddings and gluten-free baking.

Gingerbread loaf

Serves 8

275g gluten-free self-raising flour

1 tbsp ground ginger

1 tsp gluten-free baking powder

200g soft light-brown sugar

100ml sunflower oil, plus extra for greasing

1 tbsp lemon juice

Preheat the oven to 200C/gas mark 6. Lightly grease a loaf tin and line with baking parchment. Sift the flour, ginger and baking powder into a mixing bowl, add the sugar and stir to combine.

Pour in the oil, lemon juice and 170ml of water and stir until you have a smooth batter.

Pour the mixture into the prepared loaf tin and bake for 30-35 minutes until golden brown and a skewer inserted into the middle of the loaf comes out clean. Leave to cool in the tin for 10 minutes and then transfer to a wire rack to cool down fully.
