What Athletes Eat: Camille Leblanc-Bazinet's Post-CrossFit Lunch

Reigning "Fittest Woman on Earth" Camille Leblanc-Bazinet is attempting to defend her 2014 title at the CrossFit Games -- which began on Tuesday in Carson, California. In order to recover quickly and prepare her muscles for the next event, the tough-as-nails French Canadian needs fast post-workout fuel that works as hard as she does. Here's her typical midday meal.

Time and place: Lunchtime in my kitchen in Boulder, Colorado

What I'm eating: Chicken salad with kale, avocado and mango

Whose recipe?: This meal was inspired by my husband [fellow CrossFitter Dave Lipson], who's always trying to get me to eat more dark greens. I know they help with my performance and training.

Why I'm eating it: I'm pretty precise with my meals, and I measure and balance all my proteins, carbohydrates and fats. It takes me only about two minutes to weigh and prepare, though, because I bought all the ingredients ready-made.

Sometimes I'll put it in a container and take it to the gym with me for after my workout. I prefer high-quality foods with lots of vitamins and minerals. The mango spears are the closest thing that I can get to candy since I only eat real food, but they still satisfy my sweet tooth.

Ingredients:
4 ounces of shredded chicken, with a dab of mayo and Craisins
3 cups of coconut kale (purchased kale salad with shredded coconut, Craisins and coconut oil mixed in)
One-quarter of an avocado
4 mango spears

Add each to your plate and enjoy!
