Kale is glorious, says author Catherine Walthers

For more than six months, Catherine Walthers (at right) and her family ate kale in some form in at least one meal each day. She sauteed, stir-fried, braised, roasted, and massaged (yes, that's what it's called) the dark leafy green super food. The result is "Kale, Glorious Kale," the fourth cookbook from the Martha's Vineyard chef. "I learned a lot about kale and cannot say enough about how not only diverse, but delicious, it is," says the author, who "discovered baby kale, which I really like. It's so tasty and tender, and it holds up great to salad dressing." Many recipes, including potato-kale latkes, and kale, celery, date, and apple salad, are accompanied by photographs from award-winning island photographer Alison Shaw.
