Welcome to issue 3 of the Hiho Silver Country Shows Journal. We’re coming towards the end of our show season now…and what a season it’s been! This issue has been produced with Burghley and Blenheim Horse Trials in mind – two events we attend each year and can’t wait to get to this year! It’s been great to see so many of you on our stands during the year, and lovely to have you as part of our Facebook, Instagram and Twitter communities the rest of the time. In this issue we have an amazing competition that we’ve put together with Ariat, where you can ‘steal’ Emily King’s style. We’ve also handpicked products you’ll find at shows this month and beyond, put together features on some of our favourite places, shared delicious great British treats and recipes. The list goes on. lenheim Palace is more than just a stunning backdrop to the horse trials held there. It’s currently the home of the 12th Duke and Duchess of Marlborough, and is the birthplace of Sir Winston Churchill. It also provides an amazing example of 18th century Baroque architecture, and houses some of the finest antique collections in Europe. History Blenheim Palace was built between 1705 and 1733 for John Churchill, the 1st Duke of Marlborough, to celebrate victory over the French at the Battle of Blenheim in 1704, which is how the Palace got its name. Over the past 300 years Blenheim Palace has been the home of the Dukes of Marlborough, but has also been used for many other purposes, including a hospital for wounded soldiers, a home and school for evacuees, a base for MI5, and today is a popular filming location and spectacular venue for weddings and events. In 1950, the 10th Duke of Marlborough opened Blenheim Palace to the public for the first time, and since then millions of visitors have passed through its doors and the Palace is established as one of the best heritage attractions in the UK. The Palace Take a tour of the State Rooms and admire the portraits, tapestries and exquisite furniture while learning about the 300-year history of this National Treasure. Visit the Churchill Exhibition and learn all about the life of the great Prime Minister through photographs, extracts from his diaries, artefacts and a number of other elements. Gain an insight into the lives of the family that have lived at Blenheim Palace, their guests and household staff with one of three tours of the Private Apartments. The ‘Upstairs’ tour includes the Palace’s Bedrooms and the ‘Downstairs’ tour showcases the staff areas, while the Private Apartments Tour offers an overview of how Blenheim Palace has run as a family home over the past three centuries.

The Park & Formal Gardens Explore this World Heritage Site amongst over 2000 acres of parkland landscaped by one of the UK’s most famous landscape architects, Lancelot ‘Capability’ Brown. A short miniature train ride away from the Palace is the Pleasure Gardens, which boasts a Giant Hedge Maze, Butterfly House, Lavender Garden and an exhibition about how the Gardens have been used and maintained throughout the Palace’s history. WHAT CAN PEOPLE EXPECT TO SEE?

Coming hot on the heels of the 2016 Rio Olympics, this year’s Land Rover Burghley Horse Trials looks set to be an international affair, with some of the World’s leading riders descending on the Lincolnshire town of Stamford for what is considered by many to be Eventing’s greatest challenge. 99 horses from countries including Australia, Brazil, France, Germany, Ireland, Italy, Netherlands, New Zealand, USA and the UK will be competing for the substantial £63k first prize. The entry list includes many former winners. Following a remarkable recovery and now back to full fitness, New Zealand’s Andrew Nicholson makes his return to CCI4* with three entries this year: Jet Set IV, Qwanza and Nereo. Prolific Oliver Townend has four horses entered: Dromburrihy Blue, Fenyas Elegance, MHS King Joules and Samuel Thomas II. Local rider Andrew Hoy brings Rutherglen and The Blue Frontier. Pippa Funnell will be back from the 2016 Games riding Second Supreme, while Caroline Powell is entered on Flying Finish and Onwards & Upwards. The event also sees 24 first time combinations. Young British riders include Lissa Green, whose mother Lucinda Green won the event in 1977, and Oxfordshire-based Imogen Gloag who at 21 years is the youngest rider entered. At the other end of the spectrum, Italian Olympian Giovanni Ugolotti will visit Burghley for the first time with Oplitas. France looks set to lead the European contingent with eight combinations coming forward including Pascal Leroy with Minos De Petra, Maxime Livio with Qalao Des Mers; and Astier Nicolas with Quickly Du Buguet.

Riding

around the world

10

J

o Verth, from riding holiday specialists Equus Journeys, talks to us about how to choose the best riding holiday for you.

Before you decide on a riding holiday destination you need to ask your riding holiday company some very important questions; but first and foremost you need to decide what sort of riding holiday appeals to you. There are so many riding holidays to choose from – safaris, dude ranch holidays, working cattle ranches, expeditions and instructional breaks. Just what kind of experience is it that you are looking for? Do you want to see wildlife from horseback? Do you want to get away from it all for a few days and enjoy riding through unspoilt countryside? Do you want to ride through remote and spectacular scenery, that you would not be able to reach by any other means? Do you need a shower every night and a bed to sleep in; or are you happy to wash in mountain streams and sleep under canvas? Do you love the idea of reaching a new destination each day or would you prefer to unpack and ride out each day from the same place? A safari on horseback is truly amazing; nothing beats the excitement of being face to face with an elephant or the tranquillity of watching a herd of grazing zebra in the distance. Safaris where you might encounter elephant, lion or buffalo are only for experienced riders. We also offer safaris in areas where there is no dangerous game and they are suitable for all levels of rider and young children. The accommodation varies from luxury safari lodges and safari tents with their own private bathrooms to bush camps with bucket showers and long drop toilets. A pack trip is an expedition on horseback, you will experience scenery which you would otherwise not have the chance to see. You will need to be physically fit as well as riding fit for the journey. On many of these trips you camp in small tents with sleeping bags and have limited toilet facilities. Often your belongings are carried by yaks or horses so you need to pack to a minimum and not worry about the luxuries in life! Some of these are long riding expeditions and need you being as fit as possible before you travel by also doing plenty of walking, running, cycling or swimming.

On an Instructional riding holiday a good instructor and well-schooled horse can help you to improve your riding skills. Whether your interest lies in classical dressage or western riding; endurance or natural horsemanship; learning to play polo or simply improving your basic riding skills, there’s a riding holiday to suit you. Classical dressage holidays are usually arena based, but learning to ride western or experiencing your first endurance ride are generally done while out on the ride. Improve your natural horsemanship skills on a ranch holiday in USA, practice piaffe and passage on a dressage holiday in Spain or experience the thrill of jumping cross country fences on a riding holiday in Ireland. There are riding holidays that cater for all levels of experience, please make sure that you choose a ride that matches your expectations and riding ability. Ask as many questions as possible about the pace of the ride and how many hours you will be riding for. Speak to a member of staff who has been on that ride, so they can tell you from personal experience. Let your riding holiday company guide you, they will help you choose the right holiday based on your experience, fitness levels and what you want from a holiday.

A ranch holiday is your chance to live the dream of being in a western film. You choose between a working ranch where you have the opportunity to be a real cowboy and move cattle, brand and vaccinate as well as undertaking the day to day ranch duties. There are guest ranches where you can enjoy the luxuries as well as working cattle and dude ranches where you can enjoy amazing scenery and other activities. 11

Horsey holidays

W

ith autumn just around the corner, you might be planning to pack up your boots and head off in search of adventure. Whether you’re hoping to perfect your piaffe in Portugal, follow big game in Africa, tolt to your heart’s content in Iceland or something else, one thing’s for sure, you need the right kit for the job!

d a e R e i k u S

S

ukie is Andrew’s - Mr Hiho’s – sister-in-law and has been an occasional member of the shows team since 2000. She now takes holiday from her day job to work at her favourite shows and is always accompanied by her terriers, (Neurotic) Nemo and (Bad Boy) Bingo, who are a well-known fixture on the Hiho stand. She’s in charge of the kitchen, mixes a mean cocktail and loves to bake – all of which make her a valued member of the team!

With luck I’ll have had a great night’s sleep on my double bed in the back of Norman the horse lorry. During the winter Norman is used for his intended job of ferrying horses around, but after a good pressure wash in the spring he becomes home for the shows team. Complete with cooking facilities, home cinema (OK, a laptop and TV screen) and a lot of fridge space (for all our wine!), staying in Norman is really quite civilised. Taking the dogs for a walk is job number one. We can have up to five mutts, depending on who is working, but usually we have the most stunning backdrops for our morning amble – Badminton, Burghley and Gatcombe are the best. A quick shower – in Norman again – cuppa and breakfast and we’re ready to crack on with putting out the jewellery. Then we get down to the serious business of chatting to our lovely customers, many of whom we see year in, year out. It’s a long day as we’re usually open by 8.30am and don’t finish up until at least 7.30pm. On a busy Saturday at a three day event like Badminton and Burghley, we barely have time to take a breather, but I can honestly say that I love meeting all the customers, new and

14

old and the day really does fly by. Mind you, we sometimes need a little sharpener in the afternoon to keep us motivated, but stick by Andrew’s motto of “no whisky before 11am”! When we’re done for the day, we take the jewellery off the stand, put on the dust cloths, lock up and pour ourselves something cold and refreshing. It’s then my job to rustle something up for supper and quite often we’ll join forces with the teams at Dubarry, Timothy Foxx and Firepits UK for a BBQ and a gossip. Part of the joy of doing the shows is the great guys working on other stands and the evenings are a chance to catch up with our friends. Some of the shows put on parties for grooms, riders, sponsors and trade stands and Hiho is always well represented at these! Andrew’s dancing is legendary on the show circuit and he even has a (small) number of groupies courtesy of Ben Hobday’s video tweet of Mr Hiho strutting his stuff! We’ve also started a tradition at Burghley with our Trade Stands Challenge, a highly competitive night of general knowledge, practical skills – from making jewellery to using modelling balloons to market your business – and the perennially bizarre surprise round which can be anything from apple bobbing, to dangle-thrusting (don’t ask!). We’ve even had eventing royalty joining in the fun, with Mary and Emily King making up a team one year. Pack down at the end of the show is fast and efficient as we often have a long journey home or on to the next event, and we’re normally done and dusted in about one and half hours. Then it’s a quick goodbye to our friends, make sure we’ve retrieved my terrier Bingo from the nearest burger van and back on the road.

Photoshoots, fruit farms and a lot more at Forde Abbey

W

hen it came to selecting the location to capture Hiho in action, Forde Abbey was an obvious choice. Not only is the location stunning, and its proximity to the Chard office more than a little convenient, but it’s actually where Hiho’s story started many, many years ago. We caught up with Caroline Duval, the Events Manager for Forde Abbey, to find out a little bit more about this amazing place. There’s certainly a lot more than meets the eye! Forde Abbey is steeped in history and is not quite what you might expect a monastery to look like inside. Edmund Prideaux was largely responsible for converting it into a palatial residence in the 17th century and alongside its humble charm you’ll find priceless tapestries and opulent interiors. Its subsequent owners have had equally fascinating stories and one such owner found himself locked up in the Tower of London on the charge of high treason on the

18

slender pretext of having entertained the Duke of Monmouth for supper six years prior to the Monmouth Rebellion; maybe a case for choosing ones dinner guests wisely! Over the years, each generation has bought their individual styles and taste to bear in the garden and the landscape has certainly evolved since it was farmed by the Cistercian monks 900 years ago. Today’s owners, Alice and Julian Kennard have not only modernised the house, they’ve also created a soft fruit farm on the estate, established the herd of Forde Abbey Devon Cattle, and developed the Abbey into a popular tourist attraction. As well as hosting weddings, the Abbey is also used as a film location, which is hardly surprising when you have a look around the state rooms and beautifully maintained gardens. The Abbey was recently used as a location for Far From The Madding Crowd, but has also been used for other films and featured on many television programmes. Keen to move with the times, the Abbey now shares snapshots of daily life on instagram, twitter and Facebook. www.instagram.com/fordeabbey/ www.facebook.com/FordeAbbeyandGardens/ www.fordeabbey.co.uk

A brush for everything!

W

hen pottering around the house, you probably do not realise just how many brushes you have and how they can be used, absolutely everywhere. The Oxford Brush Company have a huge variety of brushes ranging from your everyday household brushes to body care brushes and pet care brushes. The Oxford Brush Company sell the world famous Redecker brushes which use only the finest cuts of wood and a range of bristles and hair. They have a brush for everything and even a brush, for a brush!

One of The Oxford Brush Company’s finest brushes is the Nail Brush. Made with bristles of varying length, their Nail Brush provides a quick and easy way to clean your nails, as well as being comfortable in your hand. Turn the Nail Brush upside down and it becomes a soap dish! This means you are able to enjoy your nailbrush and keep your soap neat and tidy too! To go with your Nail Brush, The Oxford Brush Company also have a fine selection of bath brushes. As a company, they have not limited themselves to one type of wood, and their bath brushes show this. With brushes being made from oak, pine, olive and thermowood, no matter what set of brushes you like, you will be able to find your perfect bath brush to fit your bathroom.

When it comes to cleaning your house, dusting and sweeping are two duties that will be relevant in all cases, and, luckily, The Oxford Brush Company also have brushes for these jobs. As a company, they have taken all customer type into consideration, meaning that they have chosen different styles and sizes of each brush so you can choose the best one. Their Rice Straw Broom is an ideal example with a small broom, a large broom and an accompanying hand broom, wherever you are, you can sweep with ease.

Of course, you couldn’t have a brush round up without adding a hair brush. The Oxford Brush Company have a cornucopia of hair brushes for everyone in the family and also travel brushes. Even if you have long hair and find brushing your hair a chore, they even have a brush just for you! Brushes from The Oxford Brush Company aren’t just for you either; they have a range for your furry friends as well. e were delighted to speak to Vanessa Hawkins, a member of the Shotgun & Chelsea Bun Club, about another passion in her life- fly fishing! Just like shooting, many people see fishing as a male dominated pastime, but Vanessa is one lady who loves it. Here’s why…

Vanessa was born in Gloucestershire, was the youngest of four girls, and is now 55. Vanessa hasn’t been fishing all her life, far from it. Although she always wanted to learn to shoot and fish, her father never ‘got around’ to teaching her properly – being the youngest didn’t really help the situation. That said, when Vanessa’s father passed, he did leave her his beautiful split cane Hardy rod! “My late husband wasn’t interested in fly fishing, so I didn’t do any,” says Vanessa. “My husband now knew I always wanted to learn properly, so he dug out a lake for me, where I started to learn. I then had lessons with the most wonderful ranger from Sutton Bingham called Ivan, and then joined the Damsel Flies, an all girl fly fishing club.”

Vanessa is part of The Damsel Flies, an all ladies fishing club made up of enthusiastic ladies who love to meet up for fishing, chat and lovely things to eat and drink. To find out more about The Damsel Flies, see www.damselflies.co.uk. If you’re interested in trying fly fishing for the first time, why not have a look at Shotgun & Chelsea Bun Club’s Ladies Fly Fishing Intro events, in conjunction with Orvis, that are running in North Yorkshire, London, Hampshire and Dorset in October and November. Find out more here http://shotgunandchelseabunclub.co.uk/events/

Vanessa has embraced her fishing, with a little help from her husband and land moving machinery, and is still learning. “I love all aspects of it, the casting - getting my line in a straight line and not looking like spaghetti junction!” says Vanessa. “Seeing a fish rise near the fly and trying to cast near it again, my heart always misses a beat when the fish takes the fly and the split second of ‘what do I do next?’ panic, but that goes as soon as it arrives, keeping the rod up, so not to lose the fish, even though it feels like your arm is going to fall off, then the complete euphoria when you land your fish and knowing ‘I did that’. Then there’s the smile that stays on my face for most of the day! “Some people say fishing is boring, but if you like the fresh air and the countryside, there is nothing better than standing by the water in the peace and quiet with your own thoughts (unless you are with the girls, then there is the obligatory chatting but that has to be done)!” Vanessa’s must-have The must-have bit of kit (apart from the rod, that is!) is midge spray. They love me, they eat me for a pastime, and it gets quite tricky when you are madly itching and scratching…then suddenly you have a bite and you’re not ready!!!

Great Food Made In Britain With so much food available to us now, and a variety of places to get our food from, we can sometimes forget just how good the produce is that is made on our doorstep. From Great Britain comes great food and we really do have some of the best food producers in the world. Here are some of our favourites!

The last few years have seen gin and other craft beverages coming to the fore - tales of a couple of people starting to distil their own gin and it becoming a hit seem to be a regular occurrence.

Just Gin

As such, we thought we should share our favourite tipples with you, or more precisely, that Doris should! Obviously strictly only for consumption when the sun’s over the yard arm!

Doris tends to choose her fail safe method of choosing the nicest looking bottle when selecting a new gin out from the crowd - and this certainly stood her in good stead when she chose the blue be-waxed Tarquin’s Gin from the shelf in her local hostelry. Handcrafted in Cornwall in a tiny still called Tamara - Tarquin still signs each and every bottle, which we thought was a lovely touch. Inspired by the wild Atlantic ocean, blended with local spring water and delicately flavoured using a blend of 10 botanicals, Doris prefers this gin over ice and topped with a lovely bottle of Fevertree Tonic, a twist of thyme and a slice of pink grapefruit - as recommended by the Tarquin’s gin bar which can be experienced at many shows - Doris loves the funky balloon basket bar! www.southwesterndistillery.com

A trip to the Arundell Arms in Devon recently led to Doris discovering another favourite gin from a Cornish distillery called Curio - the mention of hand-foraged Rock Samphire tempted Doris to try this slightly spicy-nosed gin - and she certainly wasn’t disappointed. It is a delicate gin, but most excellently flavoured - Doris finds it is served best over ice and topped with a bottle of Fentimans tonic and a traditional wheel of lemon - delicious. www.curiospiritscompany.co.uk The third and final selection was discovered at Darts Farm Shop near Topsham in Devon only recently. Being a lover of pink champagne, Doris was very tempted by a pink gin called Pinkster, made in Royston. Doris diligently followed their recommendations resulting in a gorgeously quaffable gin and tonic - a long tumbler, with obligatory ice for Doris, a sprig of garden mint, a generous top of Fevertree Aromatic tonic and Doris was feeling very refreshed by this dangerously quaffable drink, with the gorgeous pink tones coming from a good steep in raspberries. www.pinkstergin.com Doris hopes that you like her trio of gins - and looks forward to trying more gins on your behalf, strictly in the name of duty and obligation to you, her glorious friends, obviously!

Farming, forelocks & fashion

Meet Hiho Silver’s latest brand ambassador, Harriet Edwards. Here’s a bit more about her…

Hello I’m Harriet, a fifth generation Farmer’s Daughter from the Heart of England. I am also lucky enough to call myself a brand ambassador for Hiho Silver. Born and raised on the farm, I am a true country girl through and through and I’m happiest in a field in the middle of nowhere with my horses, dogs or shotgun for company. I am quite often found with straw in my hair or sporting a pair of muddy wellies, but that said I also have a huge passion for country style and I am rather infamously known for having a bad shopping habit! Although I have always worn typically ‘country’ brands, I have found that some can be a little outdated and unflattering for women who want to look glamorous and feel good about themselves, even if they are stood in a field with only animals around to appreciate the outfit! So, I’ve been on a mission to find great quality products that not only capture the essence of the countryside, but also have that extra stylish twist that means us country girls can rival the city slickers in the style stakes. That’s where ‘A Girl About Country’, my country style blog was born. I would often get asked by friends, family and most recently social media followers where my outfit was from or what I would recommend for them so I thought why not share my experiences with everyone – as good country brands are so notoriously hard to unearth!

26

Aside from running A Girl About Country (and shopping!), my main hobbies are horse riding and clay pigeon shooting. I also love country walks (especially when accompanied by a picnic!) attending country shows/equestrian events and baking when time allows. I’m really passionate about local produce and I love attempting to make things from produce I find on the farm – last year I successfully managed blackberry and damson jam and some sloe gin (although there seems to be an awful lot of jam left and not so much gin…). As I said, my horses are my main hobby and have been my world since I had my very first Shetland pony at the age of 3! I am lucky enough, or unlucky enough at 6am on a cold wintery morning, to have three horses (well, two-and-a-half really as Panda is just a pony). Unfortunately because I have a full time job, I don’t do as much as I’d like with them, but when time allows my love is for eventing. I have successfully competed Ali at both affiliated and unaffiliated lower levels of the sport and intend to do the same with DD (the baby of the group) when she’s trained!

I also have a huge love of clay pigeon shooting which I got into through my brother who does lots of shooting (both clay and game) when he is not working on the farm. A couple of years ago I attended my first Ladies only clay shooting event with the Shotgun and Chelsea Bun Club and haven’t looked back. I am also a regular at the ladies only Femmes Fatales events and couldn’t recommend them enough to everyone. Going to a ladies only day really helps to take a bit of the pressure off in what is historically a very male dominated sport and provides a level of encouragement and confidence which I haven’t experienced anywhere else. It’s a great way to get into the sport if you’ve never tried (or if you are a pro) and it’s an even better way to make new friends. I have met so many of my greatest friends through these clubs and it has opened doors to try new things (polo lessons to name just one!). I am so passionate about all aspects of the countryside, it really is the most beautiful place to be – give me open fields over crowded cities any day of the week. My happiest (and earliest) memories all involve the countryside in one way or another and every day I am reminded, even in just a small way, how lucky I am to be part of the countryside. Autumn indulgences... from Victoria’s Cottage Dare I say that autumn will soon be upon us? If you look closely, you will surely enough see the signs that our summer is coming to a close. Blooms are fading, berries are beginning to appear and the nights are very slowly drawing in. I have such a romantic view of the autumnal season. Particularly, the way that nature gifts us with an abundance of produce, to see us through the wintry months ahead. In our age of hypermarkets and globalisation, it’s so easy to lose touch with seasonal eating. During the next few months I make an extra effort to buy local farm food. I visit local farmer’s markets and farm shops to buy the freshest, seasonal produce and stash berries and apples from my garden as they ripen too. The result is always comforting, tasty food that helps me to stay in touch with the seasons. The following recipes are my Mother’s. Now, I know that everyone loves their Mother’s cooking. Maybe it’s the familiar, or perhaps it’s the love that is stirred into every mouthful? Regardless of the reasons, when the weather starts to turn, I always seek the comfort of her lovingly created recipes. Each dish is an ode to all things seasonally British. Prepare for beautiful Bramley apples, the finest British beef, all cooked and served in Doris and Co.’s Best Baker Dish. I love that this table wear works as wonderfully in the oven as it does on the table. They are also perfectly sized to fit two, side by side in the oven for stress free cooking.

“A big thank you to the brilliant Victoria from Victoria’s Cottage. Have a look at her website, follow her on Instagram or become part of her community”. Website www.victoriascottage.co.uk Instagram: https://www.instagram.com/victoriascottage

Shortbread Apple Crumble

Steak in Red Wine with Buttery Dumplings

Autumn marks the return of hot puddings, and top of my hot pud list will always be a crumble. Although crumbles come in all sorts of variations, most contain oats or nuts to create that wonderful contrast between soft, sweet fruit and knobbly, crunchy topping. This one, however, is something a little different. The recipe takes delicious influence from Scottish shortbread. The result is decadently rich, buttery, and sweet. The soft crumble melts into the sweet apple syrup of the fruit for ultimate comfort. Serve with custard, cream or devour it in all its naked glory. I guarantee that anyone who takes

Casserole and comfort go hand in hand. They are relatively undemanding to create and yet give so much at the table. This casserole is intensely savoury and made for light and buttery dumplings that melt in your mouth.

that first mouthful will be forever addicted. INGREDIENTS - Serves a minimum of four greedy portions For the topping: 200g plain flour 160g cold unsalted butter 100g caster sugar For the fruit base: 3-4 large bramley apples (A handful of blackberries are always a welcome addition in my home) 3 – 4 tablespoon of caster sugar 1.5 tablespoons of fine semolina (1 tablespoon of corn flour will do the same trick) 1 teaspoon of cinnamon (you can leave this out, if you wish) A few knobs of butter METHOD 1. Pre-heat the oven to 180/Gas mark 4. 2. Place all the topping ingredients into a bowl and rub them together, using your fingertips, until the texture is like large breadcrumbs. Put the bowl into the fridge whilst you prepare the fruit base. 3. Peel, core and cut the apples into slices. I try to vary the thickness between thick and thin slices, to add texture. 4. Sprinkle the sugar, semolina and cinnamon onto the fruit and give it a good mix before popping into a wellgreased Doris and Co dish. 5. Once the apples are evenly spread, drop tiny knobs of butter over the surface. 6. Sprinkle the chilled crumble topping over the apples, do not be tempted to press the buttery rubble down onto the fruit. 7. Pop into the oven for 35 – 45 minutes, when the top should be golden brown and the apples soft and oozing. Serve with blankets, cushions and a chill in the air.

INGREDIENTS - Serves a minimum of four greedy portions For the casserole: 500g British stewing steak 1 large onion, 4 carrots, 2 leeks A large handful of button mushrooms 2 heaped teaspoons of finely chopped thyme leaves 2 organic beef stock cubes ½ bottle of good red wine One cup of water 1 heaped teaspoon of Dijon mustard 2 tablespoons of mustard ketchup 1 teaspoon of tomato puree For the thickening: 1 heaped tablespoon of cornflour, slaked in half a cup of water METHOD The day before, marinade the chopped steak in the wine and other ingredients, excluding the vegetables, in a deep saucepan. The next day, bring the saucepan of marinated meat to the hob and gently bring to the boil. Transfer the mixture to the best baker’s dish, add the prepared vegetables and an extra half pint of water. Then, cover tightly with foil and pop into an oven, preheated to 160c/gas mark 3 and cook for two hours. During this time, make and chill the buttery dumplings. For the dumplings: 250g self-raising flour 125g of fridge-cold butter A pinch of salt and pepper, enough milk to form a dough METHOD Rub the flour, butter and seasoning together, using your fingertips, until the texture resembles breadcrumbs. Add milk, a few tablespoons at a time, until the mixture binds together to create a dough. Then, roll golf ball sized spheres between your hands and chill in the fridge. Back to the Oven After allowing the meat and vegetables to cook for two hours in the oven, bring the dish from the cooker and gently remove the meat and vegetables, from the liquid to begin thickening the sauce. If the sauce is still quite thin, whisk in the slaked cornflour to thicken mixture. Once completely stirred in, return the cooked meat and vegetables to the sauce and dot the dumplings on top. Tightly cover the dish with foil and return to the oven at 190c/gas mark 5 for 25 – 30 minutes. To test, gently skewer a dumpling with a knife. If it comes out clean. They are ready. Serve with a mound of creamed potato and a good glass of wine. 29

The Art of Retreat our top 10 tips from Dimpsey Glamping retreat / ri’tri:t/ noun A quiet or secluded place in which one can rest and relax…

I think we’re all agreed that our lives seem to get busier and busier and more things to get involved in or do seem to pop up every day – lovely while we’re doing it, but it can get a bit exhausting after a time! If you’re anything like me, every now and again you probably need a Duvet Day or just some time away to regroup and collect your thoughts – be it as a family, a couple or most luxuriously – completely on your own. We know from the feedback we get from Dimpsey Glamping that the retreat like-feel of the shepherd’s hut is something that people really come to treasure during their stays here – just being in your own space and spending time together with all the glories of nature seems to bring a really restorative peace to people that they don’t manage to get in their busy lives. One of our guests was treated to a break here by her daughters – evidently she had often said that she would like a two-day break away somewhere really peaceful completely on her own. They booked her a break with us through Canopy & Stars and she arrived armed with 6 books and her supplies. Two days later, we saw her as she was leaving and she was radiating the most laid-back calm – and extolling the virtues of talking to no-one for 48 hours, we were quite jealous!

Sadly it’s not always possible to get away, so here’s a few tips from us to grab some time back and get a little bit of soul restoration into your lives… Quick retreat tips… Take a walk – obviously good for the body, but the soul gets a recharge too. Spending some time outdoors and walking gets oxygen into your lungs and stops you multi-tasking for a while (yes, move away from the phone!!) – a little mini retreat, step-by-step. Take time to look around you – how often have you actually looked around you as you walk, ride a horse or are a passenger in a car? Take the time to notice things – flowers, trees, houses, the sky – concentrating on things and noting them in your mind around you drags the brain away from busy thoughts and gives it a rest. Take time for tea – often when we make a tea (or a coffee), we rush through making it so that we can get onto the next thing, but stop! Actually giving the tea or coffee time to brew grabs a few minutes back for you – stand against the worktop or sit down nearby and just clear your mind of thoughts – if any do pop in, just ask them to move along please and leave you to your few moments of contemplation. Takes 2 minutes maximum, but amazingly restorative. Take time for a cuddle – we often cuddle our partners or our children in passing – but if you stop and take some time out to actually engage in the cuddle and just drink in the nearness of your co-cuddler, it brings a little moment of peace and belonging – every little helps! Take time to compose yourself – instead of rushing to your desk or into the car and starting immediately – just take 60 seconds to breathe and compose your thoughts, it’s our shortest retreat trip, but does give your brain time to catch up with you and change tasks.

32

Retreat tips for when you have a bit more time... Take time to read a book or a magazine – make a drink, abandon the phone, the computer and people - find a quiet comfortable place to read and indulge yourself for 20-30 minutes, it’s really not that long – but downtime is good and helps you to be in a better frame of mind to cope with uptime. Take time to eat – prepare a nice meal (it doesn’t have to be anything fancy), lay the table or a tray and sit down and eat properly rather than on the run. Notice what you’re eating and take time to enjoy it – it’s a mini-retreat for your tummy rather than assaulting it with a torrent of food while you’re running out of the door! Take time for a bath – make plans to run a bath (or take a long shower) – it’s important to plan it so you can have clean fluffy towels and spoil-you products – take your time and then take your time drying yourself and applying luxurious body creams, doing your nails or styling your hair – things we do every day but normally rush through them. Book some time to indulge yourself – it’s like a spa retreat at home. Take time to lay in your garden, in a field, in a park – pack up a picnic, take a blanket and then make sure you’ve left enough time to eat and then just lay back and watch the sky go by – a great slice of time to empty your brain of busy thoughts and catch up with yourself and your family. Take time for a nap (or a duvet day) – if you’ve only got 30 minutes you can fit a power nap in, hide away on a sofa or in a comfy chair and just close those eyes, even 30 minutes can give you a little boost and prepare you for next few hours. Alternatively if you can clear a day, make an occasion of having a duvet day and pop those snoozes in between watching box sets and reading the papers and magazines – absolutely perfect, costs nothing and feels decadently indulgent!
