July UPDATE

Dear friends and supporters of ARC,

In this month's newsletter, you'll find details about the upcoming July ARC cafe, you can read our latest blog article "Why I'm an Animal Rights Activist when There Is so much Human Suffering in the World," and find out how you can help us to create a vegan dining guide for Mobile, AL. ARC is an all volunteer organization, and in our new feature "Meet the Volunteers" you can read about Roy, one of our most dedicated volunteers, whose own awakening to compassion for all sentient beings has led him to become someone he never expected to be. And please don't stop there or you'll miss a lip smacking recipe perfect for summer, BBQ jackfruit empanadas with plantain that is a proven hit with vegans and non-vegans alike.

Meet the Volunteers! Roy Duvall

Roy was a little nervous before his first circus protest, when Ringling Bros. came to Mobile in June of 2014. He’d never been active for any cause and still insists he's a certifiable introvert. But he ended up feeling so good about being there raising awareness and speaking out with compassion for the circus animals that he was the first to sign up for the protest when Cole Bros. Circus came to town later in the summer....

BBQ Pulled Pork Empanadas
 
For the filling:
3T coconut oil
1 large very ripe plantain, sliced (plantains are ripe when the skin is already black)
1 onion
2 T minced garlic
2 cans green (young) jackfruit in brine (nb: you do NOT want the kind in syrup), core removed (Jackfruit is like pineapple and will come with some of the core connected to the fruit. You want to cut away that core and discard it.)
1 tsp garlic powder
1 tsp cumin
2 T brown sugar
2 T chili powder
1/8 tsp. cayenne (optional)
1/4 tsp salt
1 cup BBQ sauce
½ cup water
 
For the dough:
2 store bought pie crusts or
2 ½ cups all-purpose flour
1 ¼ teaspoon salt
½ teaspoon onion powder
¼ teaspoon garlic powder
¾ cup or 1 ½ sticks cold Regular Vegan Butter (like Earth Balance), cut into ¼ inch cubes
6 Tablespoons or ¾ stick cold Vegan Shortening, cut into ¼ inch cubes
10 tsp cold water
 
To make filling:
Heat 2 T coconut oil over medium high heat. Add plantain and cook until golden brown on both sides. Remove plantain and set aside.
Add another tsp. coconut oil, and reduce heat to medium. Add onion and cook until tender, about 5-10 minutes. Add garlic and cook another 2 minutes. Toss jackfruit with all spices. Then add to the onion mixture. Add BBQ sauce and water. Stir well. Cover and simmer for 20 minutes. Once jackfruit is tender, smash it with a fork until it is well shredded. Cook another 5 minutes.
To make crust:
Whisk together all dry ingredients. Cut in butter and shortening until mixture has consistency like coarse sand. Add water and combine with your hands, careful only to mix as much as necessary. You can also use a food processor, but be careful not to overmix. Form dough  into two balls. Press these into disks. Wrap in saran wrap and refrigerate for one hour to three days. 

Make your empanadas! Pre-heat oven to 350F. Roll out dough on floured surface into a thin sheet. Then cut out circles of varying sizes depending on whether you want small or large (appetizer or main course) sized pastries.  Place jackfruit filling and a few plantain slices in center of circle. Fold the empanada discs and seal the edges with a fork or your fingers. Bake until golden brown, about 30 minutes.
