Sizzlin' Summer

There ain't no cure for the summertime blues? We disagree! There's a whole rainbow of colors to choose from to keep you happy, healthy, and satisfied! Head down to your local farmers' market and choose your favorite hues to create a fresh summer fruit salad, a delicious veggie stir fry, or a refreshing chilled soup!! 

Seasonal Summer Fruits

Orange/Yellow
Apricots, Peaches, Cantaloupe, Corn, Summer Squash

Red
Watermelon, Strawberries, Cherries, Tomatoes, Raspberries

Green
Lettuce, Cucumbers, Green Beans, Kiwi

...And with one of summer's superfruits, the anti-oxidant rich blueberry,
having the blues is actually quite good for you!



Grilled Peach Almond Clusters

Recipe by Julia Mallon 

The juicy grilled stone fruit and floral lavender make this recipe a tasty summertime snack or healthy dessert. Keeping these ingredients as party staples will make this recipe more accessible when the grill gets turned on!

Ingredients 
1 1⁄2 cups roasted, unsalted almonds
1⁄2 cup shelled pistachios
1⁄4 cup clover honey
1⁄4 tsp sea salt
1 1⁄2 tsp dried lavender
1 lemon, zested
Smoked sea salt, to sprinkle
1 peach, pit removed and thinly sliced
2 tbsp mild medium heat oil

Procedure
1. Pre-heat oven to 350 degrees.
2. Chop almonds and pistachios finely in food processor.
3. Mix chopped nuts with sea salt, dried lavender, and lemon zest.
4. Warm honey in a sauce pan on low, remove from heat and add nut cluster mix. Stir until everything is evenly coated.
5. Drop 1 leveled Tbsp of mix on a parchment lined baking sheet and flatten into a quarter-sized disc.
6. Sprinkle smoked sea salt on top of each disc and set aside for 10 minutes so discs have a chance to set. After 10 minutes, touch up the shape and size once more.
7. Bake for 8-12 minutes until edges are slightly golden brown, watching carefully as they burn quickly.
8. While clusters are baking, heat up a cast iron griddle on medium heat.
9. Toss peach slices with oil and brush oil on the griddle.
10. Place peaches flesh side down on griddle for about 3-4 minutes until grill marks form.
11. After brittle has cooled completely, remove from baking sheet and top with one thinly sliced grilled peach.

Makes 32 discs
