Green Man opens at 7:09 p.m. In 1943, Ignacio “Nacho” Anaya of Piedras Negras, just across the Rio Grande from Eagle Pass, Texas, threw together a quick snack for a group of American shopping women, using what few ingredients he had on hand: fried tortilla triangles, shredded cheddar cheese, and sliced jalapeños. Boom, instant hit! We revel in the International Day of the Nacho with as many variations on this enduring delicacy as folks deem to contribute.
