This week we head to Seattle, a city not yet under the Eater purview, and select fifteen newish locales that have been garnering serious buzz. This time around, we've been fortunate enough to consult Seattle Times food and restaurant columnist Nancy Leson, who has shared with us some of her picks.

This undertaking has revealed a single overarching trend, one that has played out all over the country: going informal. As Nancy put it, "'Name' chefs opening smaller, more casual restaurants (read: affordable menu, expensive cocktails)." Here now, the Eater Heat Map to Seattle, a chronicle of the city's restaurants of the moment.
